Over a year ago, we took a portion of our Belgian Dubbel, Fallow Fields, and squirreled it away in a few bourbon barrels. After the long rest, the bourbon notes were strong but were asking for something a little more. We then finished this pilot with the addition of cherry juice, which adds a stone fruit nuance to round out the flavor.
